Rice, Corn, Avocado & Fried Egg Lunch

This is my go to lunch or sometimes dinner when I don't have a lot of extra time on my hands. It's healthy, filling and doesn't take a lot of time to throw together.





Rice, Avocado & Corn Lunch Bowl

Serves one. Increase amounts to serve more than one :)

1/2 C to 3/4 C Cooked Rice (Depending on how hungry you are)
2 T or so Frozen (or Fresh) Corn
1/2 an Avocado, sliced
1 Egg
1 T butter
Sprinkle of Parmesan cheese
Dash of salt and pepper

Heat 1/2 C to 3/4 C cooked rice. Place in bowl and set aside.
In a medium pan, heat the T of butter in the pan until melted, crack one egg, season with salt and pepper. On the opposite side of the pan, sprinkle in the corn.
Fry egg to preferred doneness. Corn only requires a couple of minutes to heat to a perfect temperature.
Season rice with salt, pepper and Parmesan cheese. Sprinkle corn on top, and place fried egg on top.
Dress liberally, or conservatively with hot sauce (I use Chalula), serve with sliced avocado on the side.
